Ore Ida Recipes, Hints & Tips
Ore Ida is a brand name of frozen potato products owned by the Heinz Corporation. In fact, the Ore Ida brand holds over 50% of this section of the food industry. The brand was named for the two states of Oregon and Idaho, the two largest producers of potatoes in the world.
Known mostly for their frozen tater tots and fries, Ore Ida has expanded to include oven toasted potatoes and their brand of microwavable potatoes called "Steam-n-Mash". Ore-Ida Salad Recipes
Picnic Potato Salad with Ham and Peas
An easy recipe for potato salad with just enough bite in the dressing to be tastefully different, with the added twist of bacon, ham, and peas to add color and nutrition.
Ingredients
8 slices bacon
2 C. cubed ham
5 lb. all-purpose or Yukon Gold potatoes, cubed (peeling is optional)
1-2 C.frozen peas, fresh if you can get them (but not canned)
1 bottle Ranch-style salad dressing or to taste
salt and white pepper to taste
Directions
Cook the bacon in a 12-inch skillet until the bacon is crisp. Remove the bacon, crumble into small pieces, and put about half in a large bowl, reserving the remainder. Cook the ham in the bacon fat until lightly browned. When cooked, add to the bacon and reserve. Boil the potato cubes in a large pot until soft. Drain well. Add drained potatoes to bowl with bacon and ham and blend in the salad dressing. Add the peas and salt and pepper to taste, if desired. Garnish with the remaining crumbled bacon.

Baked Potato Casserole
Upgrade your potato side with this rich and cheesy casserole.
Ingredients
5 lbs. red potatoes, cooked and cubed
1 lb. sliced bacon, cooked and crumbled
4 C. (1 lb.) cubed cheddar cheese
4 C. (1 lb.) shredded sharp cheddar cheese
1 large onion, finely chopped
1 C. mayonnaise
1 C. sour cream
1 tbsp. minced chives
1 tsp. salt
1/2 tsp. pepper
Directions
In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture and toss gently to coat. Transfer to a greased 4-1/2 qt. baking dish. Bake uncovered for 50-60 minutes or until bubbly and lightly browned.

Mashed Garlic And Onion Potatoes
Add fresh garlic, thyme and onion to potatoes to get this flavorful side dish that goes well with any meal.
Ingredients
6 medium russet potatoes, scrubbed
1 Tbs. olive oil
6 cloves garlic, minced
2 medium yellow onions, chopped (about 2 C.)
1/4 C. skim milk
1/2 tsp. salt
1/2 tsp. black pepper
1 Tbs. chopped fresh thyme (or 1 tsp. dried)
1 Tbs. butter, melted
Directions
Cook potatoes until fork tender (about 30 min). While potatoes are cooking, heat olive oil in a medium skillet over medium heat. Add garlic and onions, cook, stirring frequently until soft and golden (about 10 min). Drain potatoes, reserve 1/4 C. liquid. Cool potatoes until you can handle them to slip off the skins. Cut potatoes into quarters and return to the saucepan. Add 1/4 C. potato water, milk, salt and pepper. Heat mixture until heated through (about 5 min).
Mash potato mixture until smooth. Stir in onion/garlic and thyme. Spoon potatoes into a serving dish, drizzle with butter and serve.
