Pasta Tips

When cooking pasta, after adding the pasta to the water keep stirring until it starts to boil again to keep it from clumping up and sticking.

Dry Pasta

If your dough breaks as you roll out your pasta, it's probably because your dough is too dry. Be sure to keep the fresh dough covered with a moist towel after forming the dough, and between the different stages of kneading and rolling to form the pasta. Once the pasta has been cut into its desired shape, it is recommended to dry the pasta by hanging and dusting with semolina flour.

When boiling pasta, put a little sugar in the water along with the salt. This will bring out a better flavor!

Boiling Over

You can prevent pasta from boiling over while cooking by rubbing a small amount of butter or shortening around the rim of the pan. It really works. No need to add oil to the water and have all that wonderful sauce run off.
