Recipe Used: Chickpea Salad with Mangos and Mint



 

Ingredients
1 can of chickpeas, drained and rinsed
1 mango medium-ripe
Kopali Organic Mango
4-5 twigs of mint, leaves chopped finely
2 Tbs. olive oil
1 Tbs. red wine vinegar
salt
pepper

Directions
Whisk together the olive oil and vinegar, toss with the rest of the ingredients and the salt and pepper to taste.

Review:  “I like the chewiness of the dried mango. I like different textures in my dishes. I think the dish was delicious but I don't think I would "cook" with the product again. I prefer to eat it out of the package for a quick snack.”

Recipe Used: Stirred Fried Veggies with Mango and Almond Topping

Ingredients
1 bag Asian frozen vegetables
1 Tbs. soy sauce
oil for stir fry
2 C. steamed white or brown rice
1/2 bag of Kopali Organic Mango, chopped into small pieces
1/2 C. almonds

Directions
Heat up oil in a wok or large skillet until hot and add in bag of frozen Chinese or Japanese vegetables. Add in soy sauce. As soon as vegetables are tender, turn off the heat and add mango and almonds. Serve over steamed white or brown rice. Serves 4.

Recipe Used: Fruity Granola

Ingredients
1/3 C. light brown sugar
1/4 C. vegetable oil
1/4 C. water
1/4 tsp. salt
3 1/2 C. regular oats
1/2 C. sunflower seeds or chopped nuts
Kopali Organic Mango
Non-stick cooking spray

Directions
Combine brown sugar, oil, water, and salt in a small saucepan. Heat, stirring until sugar is melted. Drizzle mixture over oats, tossing well. Spray non-stick coating on a large shallow baking sheet and spread oats. Bake at 250 degrees 30 minutes, stirring occasionally and add the seeds or nuts the last 10 minutes. Cool. Stir in dried fruit bits. Store in a tightly covered container.
