Recipe Used: Baked Fish with a Tomato Mushroom Sauce
Ingredients
3 Tbs. vegetable oil or olive oil
1 sm. carrot, finely chopped
1 sm. onion, finely chopped
1/2 stalk celery, finely chopped
2/3 C. mushrooms, sliced
2 cloves garlic, minced
1 26-oz. box Pomi brand chopped tomatoes
1/3 C. dry red wine
1/2 tsp. dry thyme
1/2 tsp. basil
1 bay leaf, whole
1 tsp. fresh lemon juice
salt to taste
pepper to taste
4 fish fillets (cod, halibut, or snapper)
2 Tbs. Italian parsley, finely chopped
Directions
In a medium skillet, heat oil, over medium heat. .Add the carrot, celery, onion, and mushrooms and sauté over low heat, about 5 minutes or until soft but not browned. Stir in the garlic and sauté until fragrant, about 30 seconds. Add the tomatoes with their juice and the wine. Stir in the bay leaf and spices. Taste and add salt and pepper as needed. Bring to a boil and then reduce heat to low and simmer, uncovered, stirring occasionally until slightly thickened. about 15 minutes. Add the lemon juice. While sauce is cooking, preheat the oven to 350°F. Place the fish fillets in a 9” x 13” baking dish. Spoon sauce over fish and bake 15 to 20 minutes or until fish flakes easily. Remove from oven, sprinkle with reserved, chopped parsley and serve. Serve with steamed white or brown rice.

Review: "I have had Pomi tomatoes in my cabinet for years. I have found that they are the closest thing to fresh tomatoes, especially out of season. The packaging makes them easy to store and the box has done away with the tinny taste of canned tomatoes."

Recipe Used: Meat Spaghetti Sauce
Ingredients
1 onion, chopped
1/2 stick butter
1 lb. ground beef
1 tsp. cinnamon
1 tsp. sugar
salt, to taste
pepper, to taste
oregano
1 26-oz. box Pomi brand chopped tomatoes
1 C. hot water
Directions
Brown onion with butter in a skillet. Add the ground beef and brown. Add the cinnamon, sugar and salt and pepper to taste. Add some oregano. Add the Pomi tomatoes. Simmer for 45 minutes. Add hot water if you think it needs more liquid.

Recipe Used: Pasta with Sausage and Tomatoes

Ingredients
2 Tbs. olive oil
2 lb. sweet Italian sausage, crumbled (hot or mild)
1 C. diced onions
3 cloves garlic, minced
3 C. Pomi brand chopped tomatoes
1 1/2 C. whipping cream
1/2 tsp. salt
12 oz. pasta
3 Tbs. minced fresh parsley
Freshly grated Parmesan cheese
Fresh parsley
Directions
Heat oil in heavy large skillet over medium heat. Add sausage. Cook until sausage is no longer pink, stirring frequently, about 7 minutes. Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring occasionally, about 7 minutes. Add tomatoes, cream and salt. Simmer until mixture thickens slightly, about 4 minutes. Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally to prevent sticking. Drain. Serve on a plate or flat bowl with cream mixture. Top with fresh grated parmesan and parsley.

The comments ranged from tasty and the flavors all fit nicely together to my favorite comment which was: This recipe beats the Olive Garden and I have eaten there many times. I really enjoyed the combination of the tomatoes and the whipping cream.
This recipe was quick and easy to make. The ingredients all fit together nicely and from start to finish the platter was on the table within a half hour. Everyone asked for a second helping and all I can say is it was delicious. The tomatoes were sweet when offset by the sausage and the cream."

Recipe Used: Tomato and Feta Pizza

Ingredients
3 C. Pomi brand chopped tomatoes
1 Tbs. crumbled feta cheese
1 green onion, finely chopped
2 tsp. balsamic vinegar
1 tsp. olive oil
1/4 tsp. dried oregano leaves
1/4 tsp. pepper
4 whole soft pitas
Directions
Combine all ingredients except pitas and mix well. Cover and let stand for 20 minutes. Heat oven to 350 degrees. Arrange pitas on a baking sheet. Spread tomato mixture evenly over pitas and bake for 10-20 minutes. Slice into wedges and serve as appetizer or whole pizza as a meal. Makes 4 Servings. Serving Size: 1 pita with 3 oz. toppings
Review: "The tomatoes were quite tasty, but dividing the container onto 4 pizza was a little too much tomato for my family. The overall taste was very good though. I did make one small pizza with the tomatoes where I put a layer of ricotta cheese, sprinkled it with crushed garlic, spread a layer of Pomi tomatoes, (mixed according to the recipe for the Feta pizza) and then topped it with mozzarella cheese and baked it till the cheese bubbled. They were quite good."

Recipe Used: Tortellini Sausage Soup

Ingredients
1 20-oz. package cheese tortellini
8 C. chicken broth
1 C. thinly sliced carrots
2 C. Pomi brand chopped tomatoes
4 C. baby spinach
2 garlic cloves, finely minced
a few precooked frozen chicken sausages, thawed and cut into chunks
1 tsp. olive oil
Parmesan cheese
Directions
Heat olive oil in a small saucepan over medium heat and add garlic and sausages. Cook until sausage is heated through and slightly browned. Set aside. Heat up chicken broth in a large pot and add carrots, garlic, sausages, tomatoes, and tortellini. Cook over medium heat for about 15 minutes or until pasta is cooked and carrots are tender-crisp. Add spinach, mix, and serve with Parmesan cheese over the top.

Recipe Used: Black Eyed Peas and Pomi Tomatoes Over Rice
Ingredients
1 C. black-eyed peas
2 cans salt-free chicken broth only with fresh black-eyed peas
1/2 C. water
1 Tbs. salt
1/2 tsp. black pepper
1 green pepper, chopped
1 med. onion chopped
2 Tbs. cumin
2 Tbs. garlic
1 C. cooked rice
1 box of Pomi Chopped Tomatoes, drain some of juice from tomatoes use only tomatoes
Directions
Cook black-eyed peas as directed on package. Add chicken broth to a bowl. Add black-eyed peas, onion, salt and pepper. Cook the peas for about 30 minutes. Add cumin and garlic before the peas have finished cooking. Let that cook for another 15 minutes then add Pomi Chopped Tomatoes. Cook for another 15 minutes. Serve hot over rice.

Recipe Used: Delicious Homemade Vodka Sauce
Ingredients
2 cloves garlic
1 lg. shallot
1/4 yellow onion
2 Tbs. olive oil
1 box Pomi Chopped Tomatoes
1 tsp. crushed red pepper flakes
1/2 C. heavy cream
1/4 C. vodka
1 Tbs. all purpose flour (if necessary for thickening)
Directions
In a saucepan, brown garlic, shallots and onion in olive oil, about 5 minutes. Add canned tomatoes, fresh tomatoes and crushed red pepper. Mix, breaking up tomatoes, and let cook on medium to high heat for 5-10 minutes. Add heavy cream and vodka and stir. Let cook for 5-10 minutes. If the mixture doesn't thicken, quickly stir in 1 Tbs. flour. Keep heated until serving. Serve over cooked penne or rigatoni or pasta of your choice.
Review: "I absolutely adore this product! First of all, I find it extremely refreshing that the ingredient list is simply: tomatoes. That’s all it should be! I admire their goal to rid tomato products of any dangers from metallic canning materials. As far as I know, they’re the first company to put tomatoes in a box, and I think that should be the direction we head toward. Also, the added benefits of kosher certification and gluten-free labeling are a definite plus, especially in today’s day in age.
Those were my impressions before I even tasted the product! I used it to make my favorite pasta sauce (Delicious Homemade Vodka Sauce from Recipe4Living). The recipe usually calls for canned tomatoes and a couple of fresh tomatoes to balance out the flavor. This requires chopping up the tomatoes and draining the canned tomatoes so they don’t give off too much liquid. But with POMI tomatoes, I just dumped the box in and it was the perfect amount of liquid, tomato and fresh flavor! No extra preparation needed. Not to mention, I’ve made this sauce many times and when I used POMI, my family and I agreed it had the best flavor it’s ever had.
Five stars for POMI tomatoes."
