Ingredients
8 oz. Purity Foods Spelt Rotini
1-lb. four-cheese Italian sausage
5 oz. shredded low fat mozzarella cheese
1 jar Italian style button mushrooms, quartered
1 Tbs. diced garlic
1 jar of your favorite spaghetti sauce

Directions
Prepare Rotini as per package directions. Meanwhile brown italian sausage in casing in a 9-inch skillet sprayed with olive oil pan spray. Preheat oven to 400 degrees. Remove browned sausage from skillet and slice diagonally in 1/2-inch slices. Drain pasta  and return to cooking pan. Add sliced sausage, spaghetti sauce, quartered mushrooms and garlic to pasta. Stir well. Spray a 2-quart casserole dish with olive oil pan spray. Pour pasta and sausage mix into casserole and spread out evenly. Top with shredded mozzarella cheese and bake uncovered for approximately 30 minutes. Or until sauce has thickened and cheese is melted.

Review: Last night I tried the Purity Foods Spelt Rotini that you sent me for review with great results. Since neither my husband nor I are great fans of cold pasta salads, I instead used it in my own recipe for baked pasta. Dinner was late due to yard work all afternoon, it is still warm here but just cool enough to remind us that fall is here. So we decided to fire up the oven and enjoy our version of fast and easy "comfort food". The results were wonderful! Very easy to prepare, and delicious results. So much so that when I asked my husband what he wanted for lunch today he requested the leftover pasta! SHHHH, we won't tell him I made it a little healthier!

Recipe Used: 15-Minute Mediterranean Rotini


Ingredients
2 C. Purity Foods Spelt Rotini
2 Tbs. basil pesto
1 1/2 Tbs. feta cheese, crumbled
pitted black olives, halved

Directions
Cook rotini according to package directions.  Drain and transfer to a bowl.  While pasta is still warm, combine with pesto until evenly coated.  Sprinkle with feta cheese and as many black olives as desired.  Serve immediately.

Review: I had never tried spelt pasta before, and I was expecting it to taste like whole-grain pasta. Whenever I’ve had whole-grain pasta, it has been kind of gritty and has fallen apart when I’ve tried to eat it. This was very different, however. It was soft and fluffy, like regular pasta, and tasted great. One thing I liked about the VitaSpelt was that it was much quicker to cook than regular pasta. It was in and out of the pot in just about 5 minutes! This pasta would be perfect for a quick dinner or delicious lunch. I added some pesto, olives, and feta to mine for some Mediterranean flavor and loved it!

Ingredients
2 qts. water
1 1/4 C. Purity Foods Spelt Rotini
1/4 C. Bertolli Mushroom Alfredo sauce
1 C. fresh spinach leaves
1 Tbs. olive oil

Directions
Bring water to a boil and add the spelt pasta.  Cook for 7 to 8 minutes. Meanwhile, place olive oil in fry pan and sauté spinach leaves until the leaves shrink up and darken.  Heat mushroom alfredo sauce up in microwave or in saucepan. Pour pasta, spinach and alfredo sauce into a bowl and mix well.

Review: While I am normally not a fan of rotini pasta, I really enjoyed the Vita Spelt pasta. I eat a lot of pasta, but I always stick with a whole wheat or whole grain pasta so that I can get the most nutrients. Even though the spelt pasta looked like white pasta and even had a similar consistency, I thought it had a great, subtle nutty flavor with a soft consistency that worked well with my pasta dish. I created a spinach and mushroom alfredo sauce to cover the spelt pasta with and thought it was easily as good if not better than whole wheat pasta I typically use. I particularly like that the pasta had much more flexibility or "give" than whole wheat varieties without sacrificing nutrition. I enjoyed my pasta dish very much and would definitely eat it again.

Recipe Used: The Best Rotini Pasta Salad


Ingredients
1 pkg. Purity Foods Spelt Rotini
1 C. sm. black olives
1 C. cubed cheddar cheese
1 C. cubed Monterrey jack cheese
1/2 C. chopped red bell pepper
1/2 C. green bell pepper
1/2 C. red onion
8 oz. light Italian dressing
salt
pepper

Directions
Prepare pasta according to package direction. Rinse with cold water, drain. In large bowl mix, combine pasta with remaining ingredients. Salt and pepper to taste. Refrigerate, covered several hours or overnight. Toss salad before serving.

Review: I’ve never tried spelt pasta before, so I didn’t know what to expect when I tried this rotini. I thought it might be more like wheat pasta, in the sense that it would fall apart and lack lots of flavor. I was definitely wrong! This pasta was a hit with the entire family, especially my brother. We rarely eat pasta salad, so we weren’t sure how much we’d like the rotini. We were thrilled when we tried the pasta salad though. It was delicious! My brother has already begged my mom to try it again, too. Overall, I would definitely buy Purity Foods Spelt Rotini.  It’s organic, relatively healthy for pasta, and really tasty. I’d love to try it again in a warm pasta dish, too!

3 large green onions, sliced
1/2 C. olive oil
1/3 C. red wine vinegar
1 tsp. Italian seasoning
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper

Directions
Cook rotini according to directions, rinse and drain. Combine rotini, mushrooms, pepperoni, cheese, and green onions. Blend oil, vinegar and spices. Toss dressing with salad. Serve immediately or chill.

Review: Salad was a great hit.  Pasta was delicious. Spirals are ALWAYS my choice in salads and the valleys hold the dressing. I made the salad and served it at a family dinner with my husband, and my son and his family. This is definitely a 'keeper'.

Review: I was impressed with the ease of preparation of the pasta. I left about 5 pieces of the cooked pasta out of the rotini recipe just to try them alone. I and my mother were impressed with the taste and texture of the pasta. I cooked the pasta for 9 minutes to assure that it would not be al-dente. I would definitely keep this pasta in mind next time I am shopping for pasta. I could see using it in a tomato sauce recipe.

Recipe Used: Spelt Rotini and Olive Oil with Garlic Tomatoes and Basil Sauce


Ingredients
8 oz. Purity Foods Spelt Rotini
1/4 C. olive oil
2 cloves garlic, crushed or chopped
1/4 C. chicken stock or bullion
1/8 C. white wine (you can use all chicken stock if you do not want to use wine)
1/8 tsp. red pepper flakes or to taste
1/2 C. fresh basil leaves, chopped
1 C. chopped plum tomatoes or cherry tomatoes, cut in half
1/4 C. fresh shaved parmigiana cheese, or to taste
salt to taste
fresh ground pepper to taste

Directions
Heat oil over medium/high heat then lower and simmer with garlic for about 3-5 minutes to release flavor. As that simmers, cook pasta according to package directions.  After a few minutes, add the chicken stock, wine and red pepper flakes to oil. Simmer another 2-3 minutes. In bowl add chopped basil and tomatoes. Drain pasta when done (reserving a bit of pasta water) and add to bowl with basil and tomatoes. Pour hot oil mixture on top of pasta and toss together. Add parmigiana cheese and salt and pepper to taste. If pasta seems dry you can add a bit of the pasta water or a touch more chicken stock or wine if used.

Review: I enjoyed this pasta very much as far as taste goes. I thought that the cooking time was too long though. I cooked it for the minimum of 7 min as stated on box but even that I thought could be a little less. Also being a diabetic I would like it better if it had less sugar making it also have less carbs.
