Rigatoni a la Vodka

Rigatoni a la Vodka with Chicken and Asparagus

This quick and easy rigatoni a la vodka recipe will make you feel like you're at an Italian restaurant!

Ingredients

1 16-oz. box rigatoni pasta

water for boiling

2 boneless, skinless chicken breasts

6-8 stalks asparagus

salt and pepper

desired seasonings for chicken and asparagus

1 19.8-oz. container Scarpetta Tuscan Vodka sauce (use all or use half depending on how much sauce you like)

olive oil (enough for sauteing)

Parmesan cheese, shredded

Directions

Set a pot of water to boil. When boiling, throw in your rigatoni to cook according to al dente box directions (typically 14-15 minutes). Drain pasta and run under cool water and return to pot.

Chop asparagus stalks into 3-4 pieces each. Drizzle olive oil in skillet (enough to coat pan and saute asparagus). Place asparagus in pan and season with salt, pepper and other seasonings. When the asparagus is tender, remove to plate and pat dry of excess oil.

Chop up room temperature, cleaned, chicken breasts into bite sized pieces (If frozen, thaw in the microwave). Add more olive oil to pan to saute. Add chicken to the pan and season as desired. Remove chicken to dish or bowl to set aside.

Use a new skillet or clean off the one you've been using to heat up your sauce. Simply pour the Scarpetta sauce into the pan over medium flames. Let heat for 2-3 minutes, then add chicken to the sauce. Let heat for 2 more minutes.

Plate your pasta and top with chicken vodka sauce and shredded Parmesan cheese. Serve the asparagus as your side dish. Also great with crusty Italian bread!

"Whenever I go out for Italian, there is one dish that I always want to order: rigatoni a la vodka. It might not always be on the menu but so long as I know they have vodka sauce and rigatoni, that’s what I request. So, when I saw that Tuscan Vodka was a flavor choice in Sauces N’ Love new Scarpetta line of pasta sauces, I knew that I’d be making rigatoni a la vodka sometime in the near future. Made with authentic Italian ingredients of tomatoes, cream, extra virgin olive oil, basil, onions, salt and pepper, this sauce has a flavor and texture unlike any other vodka sauce I’ve tasted. I felt like I was bringing Italy into my kitchen with this authentic sauce. And it made making a real Italian dinner super easy. We boiled up some rigatoni, and chopped, seasoned and sauteed some boneless, skinless chicken breasts. Next, we added the chicken to the sauce to coat the chicken and make the dish easier to plate. We cut up some fresh Italian bread to dip in the excess sauce."

"I used the Scarpetta sauce when I made spaghetti and meatballs for my family. It was very easy to use! I poured the Scarpetta sauce in a microwaveable casserole dish over my meatballs. Once the spaghetti noodles were finished boiling and drained, I added the noodles in with the Scarpetta sauce and meatballs. I added some Parmesan cheese on top and served with a salad and garlic bread. There was not a lot of sauce as my son stated he would have liked more sauce to dip his garlic bread in! I liked the sauce but I would have added some sugar to it to take the bitter taste out. I really liked the container the Scarpetta sauce came in it. It's reusable and dishwasher safe and it's clear! It's great for storing leftovers!"

"I was very excited by the idea of this product - very basic with a list of ingredients that I could pronounce. When I cooked with the sauce, I added it to cheese tortellini. Overall I was disappointed as I found it really lacked in flavor. The flavors that were there were good, but not enough. I'd be interested to try other flavors of sauce to see how they compare. But I think it's a great brand and really excellent packaging."

"I need to let you know up front, that I hate olives. Knowing I couldn't do a fair assessment of this product myself, I created an appetizer for a party at work to be able to evaluate other people's opinions. I used a container of whipped cream cheese and added the entire contents of the Artichoke and Olive spread to it. I sliced up a French Baguette and spread the mixture on the bread, leaving the remainder in a bowl to use as was wanted. I set the plate out and people were pretty positive in the feedback. The only people who didn't care for it were the ones like myself, who just don't like olives. I did try a small taste, and I have to say, it sure did taste like olives! One of my co-workers had very high praise for it and took what was left home with him to finish up. One person said they found the texture a little unpleasant as it was gritty feeling. That was the only negative comment I got from anyone. There are people I work with who were interested enough to ask what the product was. I personally wouldn't purchase it, at least in this flavor."

Grilled Turkey Sandwich

Grilled Turkey Sandwich with Asparagus Spread

Asparagus spread from Scarpetta Sauces N' Love gives this delicious grilled turkey sandwich a special taste!

Ingredients

2 slices multigrain bread

2 slices provolone cheese

1 slice oven roasted turkey

3-4 leaves baby spinach (to your liking)

1 Tbs. cream cheese

1 Tbs. Sauces N' Love Scarpetta Asparagus Spread & Dip

Directions

Butter two slices of bread (one side each) and lay butter-side down on plate or working area. Next spread 1 slice of bread on opposite buttered side with cream cheese and the other slice of bread on opposite side with the asparagus spread. On side with the cream cheese, place the Provolone cheese folded in half and top it with the sliced turkey folded in half. Place the baby spinach on top of the turkey and then place the other slice of bread, with the asparagus spread side down, on top of the spinach. Place the sandwich in a small skillet and brown on low heat for just a few minutes, until the provolone cheese starts to melt. After the sandwich is done on both sides let the sandwich sit for just a minute and then cut in 1/2 and enjoy along with some small carrot sticks and the dip.

"I would like to start off by saying that the flavor of "Scarpetta Asparagus Spread & Dip" was absolutely delicious! Used as a dip with fresh vegetables or as a spread on a sandwich, if you're an asparagus lover you'll love this spread! The consistency is perfect, not thin nor thick, JUST RIGHT! I used it as a spread in a grilled turkey sandwich along with a few carrot sticks and a dollop of the Scarpetta Asparagus Dip alongside of the carrots for dipping also in the sandwich. As a quick snack when unexpected company comes over, a good idea is to place the Asparagus Dip in a small bowl in the center of a plate & surround the bowl with an assortment of cheese cubes and crackers. Also if you have baby carrots and broccoli florets (florets can be cut into smaller pieces & used with toothpicks for dipping) available, that would work too."

"I thought this was a very good product. I mixed a jar of the Sauces N' Love Scarpetta Spreads and Dips: Spicy Red Pepper with one 8 ounce package of cream cheese and spread it on a bagel. It makes a very good spread if you like hot peppers. I loved this flavor as I enjoy the hot taste of everything. You could also mix it with sour cream for a chip dip that is very delicious. This is a very versatile product that can be use in a variety of ways."
