Quick and Easy Make-Ahead Breakfasts

Whether you’re a commuting professional or a stay at home mom, it can be hard to find time in the morning to put together a good meal. But that doesn’t mean you have to resort to sugary cereal or drive-thru breakfasts!

I’ve rounded up some recipes for delicious morning meals you can (mostly) make ahead and finish up in a snap. 

Smoothies- Pumpkin Smoothie, Breakfast Smoothie, Berry Smoothie, Tropical Smoothie, Blueberry Smoothie

Speed up your morning smoothies by portioning out your ingredients the night before.

Make Ahead:   
Just chop up your favorite fruits (and veggies!), portion them into plastic bags, and store in the freezer. My go-to is 1 banana, ¼ c berries, ½ c peaches, and ¼ c kale per portion, but feel free to mix it up!

In the Morning:
Toss the contents of one bag into a blender with about a cup of almond, soy, or rice milk, a scoop of protein powder, and a dash of vanilla. Blend, and enjoy! I like to use a personal-sized blender so I can bring the blender cup with me and minimize dirty dishes.

Overnight Oats- Crockpot Oatmeal, Oatmeal with Dates, Maple Oatmeal, Deluxe Crockpot Oatmeal

Starting your oats a day in advance not only buys you a few extra minutes in the morning; it also makes for extra creamy and delicious oatmeal!

Make Ahead:
Mix 1/3 c oats, 1/3 c Greek yogurt, and 1/3 c soy milk together in a Mason jar or mug. Add ½ c fruit of your choice, mashed. I like using bananas and blueberries! If you’re feeling indulgent, add 2 tablespoons of cocoa powder (this goes well with bananas and peanut butter).

In the Morning:
I love cold overnight oats, but you can stick them in the microwave for a minute or two if you prefer them hot. Also optional: add some fresh fruit, granola, or nuts.

Yogurt Parfaits- Healthy Banana and Granola Parfait, Peach and Mascarpone Parfait, Berry Cheesecake Parfaits, Apricot Pear Parfaits, Tiramisu Parfait

Make Ahead:
Microwave ¼ c fresh or frozen fruit with 1 Tbsp honey or sugar for about 30 seconds. Layer yogurt and fruit compote in a small mason jar and refrigerate. Optional: scoop ¼ c granola into a small container or plastic bag.

In the Morning:
Unscrew the lid, top with granola (optional) and enjoy your yogurt parfait straight from the jar! 

Waffles & Pancakes- Chocolate Waffles, Sweet Potato Waffles, Gingerbread Waffles, Belgian Malted Waffles, Bananas Foster Waffles

Make Ahead:
Double your favorite recipe, wrap the leftovers in parchment paper, place them in a large container, and store them in the freezer. Flavored batters work best, since you can eat the waffles or pancakes without any messy add-ons – just mix some maple syrup, cinnamon, berries, or chocolate chips into the batter.

In the Morning:
Pop a waffle or pancake into the toaster oven and you’re good to go!
