Corned Beef and Cabbage with Horseradish Sauce

Not your normal corn beef and cabbage recipe. This has a little extra zing by adding a horseradish sauce.

  • 1 onion
  • 4 garlic cloves whole
  • 4 lbs. corned beef
  • 2 parsley sprigs
  • 8 peppercorns - whole
  • 2 lbs. cabbage
  • 1 C. sour cream
  • 1 Tbs. prepared horseradish

Peel onion and stick with cloves. Put corned beef, onion parsley and peppercorns in a large pot and cover with water. Cover, bring to a simmer and cook gently until tender, 2-1/2 to 3 hours. Cut cabbage into wedges and core. Add to the pot, cover and simmer until tender, about 30 minutes. Combine sour cream with horseradish. Serve the meat and cabbage with some of the broth ladled over all and the horseradish on the side.

  • Since neither cloves, garlic, garlic cloves, or cloves of garlic are actually mentioned, I can only figure that what was suppose to have been listed in the ingredients was: 1 Onion and 4 cloves whole. This would make more sense than trying to stick garlic "cloves" into the onion? I understand how easy it could be to mistype garlic with cloves. Unless garlic is also an ingredient. It would be nice if this could be clarified. The recipe looks outstanding though!
