Fruit Salsa Recipes
This refreshing salsa screams summer - bring it to the family picnic or just enjoy it on the front porch.
2 avocados, cut in 1/4-inch diced
2 mangoes, cut in 1/4-inch diced
Juice of 2 Limes
1/4 C. minced red onion
1 Garlic clove, minced fine
1/4 C. minced cilantro
2 Jalapeno peppers, seeded and minced (optional)
Sea salt to taste
Freshly ground black pepper to taste
In a medium glass bowl (not metal), mix the diced avocado, diced mango, lime juice, jalapenos, onion, garlic, cilantro, salt, and pepper. Store in a covered container in the refrigerator for at least 30 minutes, but no more than 1 hour before serving. The fruit will begin to "cook" in the lime juice and become soggy.

Vegetable Salsa Recipes
This salsa has a complex taste with cumin, cloves, cilantro, and chilies of course.
4-6 long green chilies
2 Jalapeno chilies, chopped
4 tomatoes, chopped
1 medium red onion, chopped
1 clove garlic, minced
2 Tbs. cilantro, minced
2 Tbs. vegetable oil
2 Tbs. fresh lime juice
1 tsp. ground cumin
1/4 tsp. ground cloves
Roast, peel, seed and chop chilies, or substitute 1 can chopped green chilies. Mix all ingredients. Let stand 1 hr. before using.

Salsa Appetizer Recipes
This indulgent finger food is sure to be a crowd pleaser!
1 C. lager beer or ale
1 C. all-purpose flour
1-1/2 tsp paprika
2 cloves garlic, chopped finely
Vegetable oil as needed for deep frying
Salt as needed
1 C. purchased salsa
To make beer batter, whisk together beer, flour, paprika, and garlic until well blended. Let stand at least 2 hours. Peel avocados; cut each into 6 wedges. Dredge 6 wedges in reserved beer batter. Deep fry in hot oil until golden about 3 minutes. Repeat with remaining wedges.
Serve 3 wedges with 1/4 C. salsa.

Salsa Main Dishes Recipes
A savory meal that is made in a crockpot. Takes about 8-10 hours to prepare.
2 tsp. oil
1 1/2 lbs. top round steak, cut into 5 pieces
1/2 tsp. salt
1/4 tsp. pepper
1 medium onion - halved and sliced
1/2 medium green pepper - cut into strips
1 can cream of mushroom soup
3/4 C. thick and chunky salsa
Heat oil in large skillet over medium-high heat until hot. Sprinkle steak with salt and pepper. Place steak in skillet; cook 4 to 6 minutes or until well browned, turning once. Transfer steak to 4- to 6-quart crockpot. Top with onion and bell pepper. In same skillet, combine soup and salsa; mix well. Pour over vegetables and steak. Cover; cook on low for 8 to 10 hours. Remove steak pieces from crockpot; place on serving platter. Stir sauce well. Serve sauce with steak.
