Simple Meatloaf Recipes, Hints & Videos

Most people equate meatloaf with America and American cooking. In fact, a form of this dish has been traced back to the Romans in the fifth century who baked minced meat in loaves. Native to German, Dutch and Belgian cuisines, the meatloaf is usually ground beef or a combination of ground beef and lamb, or pork, which is formed into a loaf shape and baked or smoked.


The traditional American meatloaf owes its origins to immigrants in colonial Pennsylvania who used scrapple; a mixture of ground pork and cornmeal. In  the US we usually make meatloaf out of ground beef but also use ground turkey to make a leaner loaf. Cooked in a loaf pan or shaped like a loaf on a cooking sheet, meatloaf is a simple and inexpensive way to feed the entire family.

Simple Ground Beef Meatloaf Recipes

Crockpot Meatloaf

This easy meatloaf is made with ground beef, onion, whole tomatoes, and plenty of flavoring.

Ingredients

1/2 C. whole milk

2 slices white bread

1 1/2 lb. ground beef

2 eggs

1 small onion, peeled

1 1/2 tsp. salt

1/2 tsp. pepper

1 tsp. dry mustard

1 can (12 oz.) whole tomatoes

Directions

Place the milk and the bread in a large mixing bowl, and let stand until the bread has adsorbed all the milk. With two forks, break the bread into crumbs. Beat the ground beef into the crumbs until well mixed. Make a hollow in the center of the meat and break the eggs into it. Beat the eggs a little; then grate the onions into the eggs. Add salt, pepper and mustard. Beat the eggs into the beef. Shape into a round cake and place in the slow cooker. Drain the tomatoes, and place them on the meat. Cover and cook on Low for 5 to 7 hours.

Before serving, uncover the pot; turn the heat to High, and bubble away some of the sauce. It should be thick, not thin.

Turkey Meatloaf For Ground Turkey Haters

I had stayed away from ground turkey due to not much flavor and I didn't like the texture. This recipe was given to me by a friend I tried it and it is now a weekly favorite. Even my grandson who eats very few meats loves this stuff.

Ingredients

3 lb. ground turkey 93/7

1 pkg. dry onion soup mix

2 cans mushroom and roasted garlic soup

Milk, enough to refill 1 soup can

Directions

Preheat oven to 350 degrees. In a large bowl mix soup mix and 1 can of mushroom garlic soup well. Add ground turkey and mix with your hands or a large spoon. In a large baking pan, form mixture into a loaf. In a small bowl mix other can of mushroom garlic soup with a can full of milk and mix well. Pour over loaf. 

Cover tightly with aluminum foil and bake at 350 degrees for 1 1/2 hours.  During the last 20 minutes of baking, remove foil to brown. Internal temperature should be 160 degrees. 

Serve with mashed potatoes or rice, the soup makes a great sauce. Add a salad and you have a great comforting meal.

Refrigerate leftovers if any in an air tight container.
