Sponge Cake Recipe, Hints & Videos

The first sponge cake recipe was found in Lydia Maria Child's "The American Frugal Housewife" in the early 19th century. Sponge cake is made by whipping sugar and egg whites until pockets of air are formed and then carefully sifting in the dry ingredients to make a fluffy batter. Because the cake is flexible before it completely cools, it is used to make other desserts such as Madeleines, ladyfingers and trifles.

Inexpensive Sponge Cake

This is a great tasting cake and you can add any kind of frosting you'd like.

Ingredients

2 eggs

1/2 tsp. salt

1 1/2 C. sugar

1 C. flour

1/2 C. water

1 tsp. lemon juice

2 tsp. baking powder

Directions

Beat eggs. Add sugar and salt. Beat thoroughly. Add flour mixed with baking powder. Add water and lemon juice. Mix well. Bake in tube pan in moderate 350 degree F oven for 45 minutes.
