The lowly sugar cookie is so ingrained in the American cooking lexicon that few people ever stop to wonder how this concoction of sugar, butter, eggs, flour and baking soda or powder came to be so popular. Turns out the sugar cookie is older than the Declaration of Independence. In the early 1700's, the German Protestants who had settled in and around Nazareth, Pennsylvania had perfected what they called the "Nazareth Sugar Cookie". But it took until 2001 for the state of Pennsylvania to declare the sugar cookie as it's official state cookie. In Idaho in the early 20th century, potato farmers would plant sugar cookies alongside the potato plant in the hopes that it would cause the plant to produce "sweeter" potatoes.
Today, sugar cookies are popular for their versatility and taste. A basic sugar cookie recipe can be used for almost any kind of holiday cookie but they're especially popular at Halloween and Christmas for their ease of decoration. In fact, most sugar cookie recipes are created with the express purpose of decorating them with sprinkles, frosting, non-pareils, fruit, candy or edible paints. Whether they're hand formed, dropped or rolled and cut into shapes, sugar cookies are the go-to recipe for entertaining and fun.
Sugar Cookie Recipe
This basic recipe is essential to have on hand with little kids. Decorating sugar cookies is the perfect solution to birthday parties, rainy days and much more!
1 C. margarine
1 C. vegetable oil
1 C. confectioners' sugar
1 C. white granulated sugar
1 tsp. vanilla extract
4 1/2 C. all purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cream of tartar
decorating sugar, if desired
Cream together butter, oil, sugars and vanilla. Add eggs; beat until fluffy. Sift flour, salt, soda and cream of tartar together and add to creamed mixture. Beat until smooth. Make into balls and roll in plain or colored sugar.
Place on un-greased cookie sheet and press with a glass dipped in sugar. Bake at 350 degrees for 12 minutes.
Yield: 100 cookies
Note: These cookies freeze well after baking.
