When the school bell rings at the end of the day, you can be sure that many of those kids will be rushing home to devour whatever they find in the refrigerator or kitchen cabinet. Why not have a yummy snack waiting for them?

- This is a great lunch for the kids to brown bag with. Definitely not just peanut butter and jelly anymore!

Crockpot Super Snack Mix - Crunchy, salty and totally satisfying.

Baked Tortilla Chips - Forget the store-bought kind, and make your own fresher variety.

Honey and Spice Popcorn - Ditch the liquid butter and spice up your popcorn with something a little more interesting.

Quick Chicken Chunks - It's a quick, tasty bite! Whip up a batch of crispy-coated chicken chunks in your microwave. They're perfect for dipping.

Pepperoni Rolls
- These are much better than the store bought kind. They smell so good while cooking that no one can wait for them to come out of the oven. Great in lunch boxes for school or the office. But watch out, they may come home with orders for these.

Nachos - These nachos are my kids' and grandkids' favorite. They're easy to make and you can use ground beef, chicken or turkey. On a low sodium diet? No problem. Just get low sodium chips and low sodium taco seasoning. I use Ole El Paso brand ingredients but use what you like. This dish can be served out of the pan or put on a serving dish.

Healthy English Muffin Pizza - I love English muffin pizza but am watching my weight. Just swap a few things out and enjoy.

Potato Skin Snacks - These French fry-like snacks are baked instead of fried for a healthier treat. Great for a snack or appetizer.

Cheesy-Spinach Roll-Ups - Two kinds of cheese, spinach, artichokes, and roasted red peppers, baked in a buttery, flaky Phyllo log...True comfort food with a twist - it's actually nutritious, too!
