Tips/Info for Making Italian Recipes
Northern Italian cooks favor marjoram, whereas those in the South prefer the more assertive oregano.

Occasionally you may see the term "tomato concasse" in a recipe. This simply means to coarsely chop fresh tomatoes. It is often used in Italian-style pasta dishes.

Italian Cooking Vocabulary
Al dente: This refers to the texture of pasta that is cooked just enough so that there is some resistance when you bite into it.

Antipasto: Antipasto roughly translated to “appetizer.”  It is the dish served before the main course.  Often, if you order an antipasto platter, it will be made up of meats, cheeses, and olives.
Gelato: Gelato is a type of Italian ice cream.  It contains slightly less fat and sugar than typical ice cream.

Giardiniera: Giardiniera is a mixture of pickled vegetables preserved in vinegar.  It is often eaten as an antipasto.

Pancetta: Pancetta is a type of meat taken from the belly of a pig.  It is cured and spiced, and it is similar to bacon.
