This meatloaf is easy to make, and tastes great! I usually keep all my bread ends and left over breads and biscuits in the freezer until ready to use later. Now that the kids are grown I can add the onion and bell pepper that makes it tastes so great!
2 lb. ground beef
1/2 C. green pepper chopped
1/2 C. onions chopped
3 green onions chopped
2 eggs beaten
1/2 C. ketchup
1 tsp. garlic powder
1 tsp. salt
1/2 tsp. pepper
8-10 slices of bread or biscuits pulled into small pieces
Put ground beef, onion, green onion and green pepper in a large bowl and mix. Set aside. In a small bowl, place 2 eggs (beaten), ketchup, garlic, salt and pepper and mix well. Add egg mixture to ground beef mixture and mix. Add bread crumbs and mix well. Grease a 13x9-inch pan and preheat oven to 350 degrees. Divide the mixture in half then form into oblong shapes and set in the greased pan. Cover and bake for 1 hour. Take out of oven and cover the top with ketchup. Put back in oven for 20-30 minutes until nicely brown.

1. For a softer and juicier loaf, use soft bread crumbs instead of dry breadcrumbs.
2. For every pound of meat, use about 1/2 C. of filler ingredients such as breadcrumbs, mashed potatoes, etc.
3. Make sure not to over mix your ingredients or over bake your meatloaf. Otherwise, your meatloaf will be too firm.
4. Let meatloaf sit for 20 minutes after you take it out of the oven. This will prevent crumbling when you slice your meatloaf.
5. For individual servings, bake meatloaf in muffin or mini loaf pans.
