Meat Substitutes for Vegetarian Recipes

Tempeh is a kind of soybean cake or patty that is high in protein.  It has a chewy consistency, which makes it ideal for grilling, baking, or even steaming.

Tofu is made from coagulated soy milk.  It is formed into soft, rubbery squares and comes in either silken, firm, or dried form.  Tofu is more or less flavorless, and can be seamlessly incorporated into many dishes.

A tofu tip: Tofu can be an excellent source of calcium, but not all types of tofu are. Most tofu that is processed with calcium sulfate has about 260mg of calcium per cup. The body absorbs calcium sulfate just like it takes calcium from milk.  The alternative is tofu that is processed with nigiri, which has very little calcium.
