If you are one of those "Super Moms" who has a hetic schedule whether it be working during the day or keeping busy with the kids, here is a quick and easy menu to follow that the whole family will enjoy!
Cheeseburger Pie, Bake Low Fat French Fries, Berry Good Popsicles
Cheeseburger Pie (Main Course)
An easy casserole dish for those busy dinner nights.
Ingredients
1 lb. lean ground beef
1 1/2 C. chopped onions
1/2 tsp. salt
1/4 tsp. pepper
1 C. shredded Cheddar cheese
3/4 C. biscuit baking mix
3 eggs
1 1/2 C. milk
Directions
Cook beef, onion, salt and pepper in large skillet until meat is done and onion is soft. Drain off fat and pour meat into a 10 inch glass pie plate which has been sprayed with cooking oil; set aside. Combine in blender Cheddar cheese, biscuit mix, eggs and milk; blend until smooth. Pour over meat mixture. Bake in 400 degree oven for 30 minutes. Let stand for 5 minutes before serving.
Yield: 4-5 servings.
Bake Low Fat French Fries (Side Dish)
You can’t have a hamburger casserole without French fries and for an added bonus....these are low fat!
Ingredients
2 large potatoes (cut into wedges 1/2" thick)
2 tsp. oil
1/4 tsp. black pepper
1/4 tsp. sea salt
1/4 tsp. paprika
1/4 tsp. cayenne pepper
1/4 tsp. garlic powder
Directions
Toss all ingredients in a large bowl to ensure all fries are coated with oil and spices. Place potatoes on a sprayed or lightly greased baking sheet. Bake for 40 minutes at 400 degrees. After about 20 minutes, shake pan to redistributed fries to ensure even browning. If you prefer your fries thinner, cut wedges to 1/4" and decrease cooking time to 30 minutes.
Berry Good Popsicles (Dessert)
I assume your family will be quite full after eating this fantastic meal but every child and adult loves dessert. This recipe is good to serve not only because it is healthy but you can always make these ahead of time.
Ingredients
30 oz. light fruit-flavored yogurt
1 c. strawberries
Directions
Put strawberries in a blender and mix until berries are cut into small pieces. Mix yogurt and berries together in a large bowl. Equally divide yogurt mixture in 6 paper cups. Place a popsicle stick in the middle of the yogurt. Put in the freezer and freeze overnight.
Before eating, remove paper cup.
Yield: 6 popsicles
