Summer and fall mark zucchini season in the Northern Hemisphere. Originally from Italy, zucchini was probably brought over to the Americas in the late 19th century by Italian immigrants. Although it is often prepared as a vegetable, zucchini is actually the fruit of the female zucchini flower. Easy to grown and fun to cook, zucchini has taken its  place among the top grown and eaten squashes in the US.

Zucchini Appetizer Recipes

Cheese Zucchini Crisps
Mix together cornflake crumbs and parmesan cheese with a dash of garlic powder and cover all over your zucchini to get a great appetizer to serve before your big meal. This goes very well with marinara or peppercorn ranch for dipping sauce.

1/3 C. Cornflake crumbs
2 Tbs. grated Parmesan cheese
1/2 tsp. seasoned salt
Dash garlic powder
4 small unpeeled zucchini, cut in 1/2 inch strips
1/4 C. melted butter

Combine crumbs, cheese and seasonings; place in a plastic bag. Dip zucchini strips in butter and shake in the crumbs to coat. Place on a baking sheet; bake 375F for 10 minutes or till crisp.

Yield: 4 servings.

Zucchini Main Course Recipes

Zucchini Crab Cakes
Next time you make some crab cakes, I recommend trying my simple and delicious recipe. The secret to these is the grated zucchini and get this....there is no real crab in this recipe. All the ingredients mixed together taste like crab. So if you are a vegetarian, these are great for a meal.

1 egg
1 1/2 tsp. Old Bay seasoning
1 Tbs. onion flakes
2 Tbs. melted butter
2 1/2 C. grated peeled zucchini
1 C. plain breadcrumbs
1/2 C. flour
Oil for frying

Combine egg, seasoning, onion flakes, butter, and zucchini. Stir in breadcrumbs. Shape into cakes and roll in flour.

Fry in oil until golden brown on both sides. Serve with cocktail sauce or tartar sauce if you like.

Zucchini Bread Recipes

Zucchini Bread
The recipe makes very moist bread, so make a few loaves and freeze them for a rainy day!

3 eggs
3/4 C. applesauce
1/4 C. oil
2 C. granulated sugar
1 Tbs. vanilla
1 C. whole-wheat flour
2 C. all-purpose flour
1 tsp. salt
1 tsp. soda
1 Tbs. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. allspice
1/4 tsp. ginger
1/4 tsp. baking powder
2 C. zucchini, peel if desired, grated
1 C. nuts, chopped, if desired

Preheat oven to 350 degrees. Cream together eggs, oil, and applesauce. Add sugar and vanilla. Add dry ingredients and mix well. Stir in zucchini. Grease and flour loaf pans. Large loaf pans bake for 50 minutes or until a toothpick comes out clean. Small loaf pans bake approximately 25-30 minutes or until a toothpick comes out clean. Remove from oven to cooling racks and let cool until slightly warm before removing.

Zucchini Side Dish Recipes

Easy Zucchini
This scrumptious zucchini dish is not only good for you, it's a bit spicy and with the addition of parmesan cheese, it  melts in your mouth.

1 large onion, chopped
Celery, about 3 inches of the tops of a head of celery with leaves, chopped
Minced garlic if desired
4 Tbs. extra virgin olive oil, enough to cover the bottom of a pan
1 jar roasted red peppers, chopped
4 medium zucchini, chopped
1 can RO*TEL Original diced tomatoes and green chilies
1-2 Tbs. dried basil
1 Tbs. oregano
Salt and pepper
Freshly shredded Italian 4 cheese blend (CASARO) parmesan, asiago, romano & aged provolone cheeses

Sauté onion and celery in olive oil until soft. Add jar of roasted red peppers. Add zucchini. Add diced tomatoes and green chilis. Add basil, oregano, salt and pepper. Cook, covered, until zucchini is still firm to the bite. Spoon a layer of zucchini into separate bowls. Add a layer of Italian 4 cheese blend. Add another layer of hot zucchini mixture.

Zucchini Dessert Recipes

Chocolate Zucchini Cake
Zucchini may sounds like an unlikely ingredient in a cake recipe, but it adds flavor and texture to a regular chocolate cake.

1/2 C. butter or margarine
1/2 C. vegetable oil
1 1/2 C. granulated sugar
2 eggs
1/2 C. sour milk
2 1/2 C. all purpose flour
1/4 C. cocoa
1/2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. vanilla
2 C. finely chopped zucchini

Cream butter, oil, sugar and eggs together until well blended. Sift dry ingredients together and add to creamed mixture alternately with sour milk, beginning and ending with flour mixture. Beat well and add zucchini. Bake at 350 degrees in a greased 13x9x2 inch pan for 30 minutes.

Yield: 12 servings

Variation: Sprinkle top of above cake with 1/2 C. chocolate chips before baking.
