To freeze your fresh fish filets, place filets of fish in a freezer baggie, fill with enough water to cover fish. Allow room to let water expand due to freezing, and press out air pockets. Seal well and label it. Lay flat in your RV freezer, that way it will leave more space in your freezer.

To thaw, place baggie in sink or pan filled with cool water, it will thaw within the hour. You will not be able to tell it was ever frozen! This works the same with raw chicken breasts and the best thing is that due to the water surrounding and protecting the meat, it will never freezer burn!
