Using Zucchini in Winter Baking
The end of summer or beginning of fall is the time to get zucchini for holiday or winter baking. Get your zucchini from a farmer's market or roadside stand if you don't have a garden or know of someone that will share vegetables from their garden. Find zucchini- the bigger the better. You can get really large ones for about $0.50. Buy all that you can get. Take them home, peel them, and cut them lengthwise in half and then lengthwise again. Take out seeds, cut them into chunks, and place them in your blender or food processor. Place 2 cups of this green mush in labeled and dated plastic freezer bags. These can be store for at least a year. They will take several hours to thaw, so be sure to take it out of the freezer before retiring the night before you plan to make your zucchini treat. You'll save a lot of money!
