14-Carrot Juice
Ingredients
- 1/2 C. soft silken tofu
- 1/2 C. chilled carrot juice
- 1/2 C. grated carrots
- 1 C. low-fat vanilla frozen yogurt
- 2 Tbs. frozen orange juice concentrate
- 1 Tbs. fresh lemon juice
- 1/4 tsp. grated fresh ginger
- Pinch of salt
- 3 Tbs. pumpkin seeds; optional
Directions
Combine all ingredients except pumpkin seeds in blender; blend until smooth. Add pumpkin seeds, if desired, and blend to the desired consistency.
Yield: 2 servingsĀ
