  • 1 lb. medium shrimp, peeled and deveined
  • 3 T. soy sauce
  • 1 T. sesame oil
  • 1/2 tsp. ginger powder
  • 1/2 tsp. white pepper
  • 2 T. olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 carrots, peeled and grated
  • 1/2 C. frozen corn
  • 1/2 C. frozen peas
  • 3 C. cooked rice
  • 2 green onions, sliced

In a mixing bowl whisk soy sauce, sesame oil, ginger and pepper, then set aside. Over medium heat, heat olive oil in a large skillet. Once oil is heated, add shrimp and cook for 2-3 minutes or until the shrimp become pink. Add salt and pepper to shrimp, then set aside. In the same skillet, add garlic and onion, then cook while stirring occasionally until the onions become translucent. Add in carrots, corn and peas, and stir for 2-3 minutes. Add in rice, green onions and sauce mixture and cook for roughly 3 minutes. Stir in the shrimp, and serve!
