Ingredients

  • For Meal:
  • 4-6 oz uncooked ramen noodles
  • 1 tablespoon sesame oil
  • 1-2 tbsp mirin
  • 3 green onions, chopped, whites and green parts separated
  • 2-3 cups julienned carrots, red peppers, cabbage, bok choy, mushrooms, or broccoli
  • For Sauce:
  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar

Directions

First, combine all the sauce ingredients together in a small bowl and whisk together until totally combined.
Next, begin to cook you the noodles as the package recommends, then set aside.
Then, you need to prepare your topping veggies. Heat the sesame oil set aside for cooking in a large wok. Once the oil is hot, add the white parts of the green onions and other assorted vegetables. Stir fry for about 5 minutes or until the veggies are as tender as desired. Add the mirin to loosen the browned bits up off the bottom of the pan.
Finally, it’s time to put everything back together. Pour your cooked noodles into the wok along with your veggies, then mix in about half your prepared sauce – toss to combine. Top with the green parts of the green onions. Serve immediately and enjoy!
