  • 1 cup of shredded red cabbage
  • 1 cucumber, sliced
  • 1 cup of butternut squash, sliced
  • ¼ cup of bean spout
  • 1 can of cannellini beans
  • 1 cup of white rice or quinoa
  • 5 loose mint leaves
  • 5 loose parsley leaves
  • ½ tablespoon of chia seeds

Directions

In a large pot, boil 1 cup of white rice or quinoa. Reduce the heat to simmer.
In a large bowl, combine the shredded red cabbage, sliced cucumbers, butternut squash, and cannellini beans.
Add the white rice or quinoa to mix.
