2-Ingredient Meringue Cookies
Serving Size / Yield
- 4 egg whites
- 2 ¼ cups confectioner’s sugar
Preheat the oven to 200 degrees. Lightly grease a baking sheet with butter and flour.
In medium bowl, use an electric mixer on medium speed to whip the egg whites until foamy. Slowly add in sugar, sprinkling in as you continue to whip eggs. Once mixture stiffens scoop into a large pastry bag. Using the star tip (or round tip) pipe the baking sheets.
Place the baking sheets in the oven. Using a wooden spoon, prop open the oven door slightly so that it does not fully close. Bake for 3 hours, or until the meringues are dry. Remove cookies from pan and allow to completely cool on a wire rack.
