30- Minute Orange Chicken

- 1 lb. boneless, skinless chicken parts
- 2 C. orange juice, or as needed
- 3 Tbsp. barbecue sauce
- 1 Tbsp. vegetable oil
Place chicken into a Dutch oven or large saucepan. Stir together the oil, orange juice and barbecue sauce; pour over chicken. Sprinkle in the cranberries. Bring to a boil over medium heat, and simmer for 30 minutes, or until chicken is no longer pink, and the juices run clear. Check occasionally, and add more orange juice if necessary. Serve over brown rice or broad egg noodles.
