3 Cheese Christmas Crostini

- 1 1/2 C. cherry tomatoes, quartered
- 3 Tbs. shallots, sliced
- 2 1/2 Tbs. extra virgin olive oil
- 6 oz. ricotta cheese
- 16 slices of French baguette
- 3 tsp. basil, chopped
- 1/4 C. blue cheese, crumbled
- 1/2 C. shredded mozzarella
Preheat your broiler with the oven rach 5-6 inches from the flame. Set it on high. In a bowl, mix the tomatoes, shallots, oil, and vinegar. Spread the mixture on a baking sheet and place the rack under the broiler. Allow to broil for three minutes, making sure it doesn't burn.
On another cookie sheet, arrange the baguette slices and brush them with olive oil. Broil for approximately two minutes per side, or until they've browned. Spread the cheese mixture over the toasted bread.
In a bowl, mix the three cheeses with the basil. Spread the cheese mixture on the toasted bread and top with the broiled vegetables.
