  • 1 Tbs. black pepper
  • 2 Tbs. olive oil
  • 2 med. zucchini

Make your noodles by using a potato peeler to create long strips of zucchini. You do not need to peel the green skin off first. While you are making your strips, heat a medium sized skillet. Add you zucchini and the olive oil to the pan cook for 2 to 3 minutes. You can garnish with the pepper and a pinch of salt if you wish.
