4 Ingredient Potato Salad

This is my version of my grandmother's recipe. Everyone tells me it's the best they've ever eaten. So when we have get togethers, guess who gets to make the potato salad!

  • 3 1/2 lbs. potatoes
  • 1 dozen eggs
  • 1 32-oz. jar dill pickles
  • mayonnaise to taste

Cook potatoes with skins until tender, drain and allow to cool. Cook eggs until hard boiled and allow to cool. Peel potatoes and eggs. Chop potatoes and eggs, and put in large bowl. Add mayonnaise and mix thoroughly. May be served immediately or chilled until needed.

  • This is a good basic recipe. My family and I prefer adding chopped green onions, a little mustard and parsley. Also, when I get creative, I also add sliced black olives. As for the questions about the pickles, use some ingenuity.

  • This really is a very good, easy, quick recipe. No need for salt, or garlic, because the pickles already have those spices. It really is easy, good and just yummy. Now I think we all add our own touches or tweaks to recipes, but come on now, this is a very good recipe.

  • What about the 32 oz. jar of dill pickles??? Are they supposed to be chopped upand added to the potatoes? And where is the onion? All the recipes I have for potato salad call for minced onion. Don't think I would care for this recipe.

  • I usually add some chopped celery and onions. If I get real creative, I might add some canned mushrooms and sliced green olives.

  • My Lebanese mom used to make it with xtra virgin olive oil,salt,pepper & a little parsely along with the hard boiled potatoes & eggs.To die for.
