4-Ingredient Shortbread Sandwich Cookies

- 30 shortbread cookies
- 4 chocolate pudding cups
- 1 8-oz. pkg. cream cheese, softened
- powdered sugar
In a stand mixer, whip the pudding and cream cheese until very thick. Taste. If you want a sweeter filling, add powdered sugar and continue to whisk until desired flavor is reached.
Lay half of the shortbread cookies on a sheet and top with a small dollop of the chocolate mix. Place the other half of the shortbread cookies on top. Dust with powdered sugar.
Tip: If you put too much filling on the cookie and realize it too late, you can use the tip of a spoon and gently run it along the edge of the cookie sandwiches to remove the excess and create a clean edge.
