5 Can Tortilla Soup

Ingredients
- 1 can 15 oz corn
- 1 can 15 oz black beans
- 1 can 10 oz diced tomatoes with green chili peppers and onions
- 2 cans 14.5 oz chicken broth
- 1 C. cooked and diced chicken
- 1/4 medium onion finely chopped (optional)
Directions
Depending on how thick or thin you want the soup, you may or may not drain the corn and tomatoes. Otherwise just open and dump all cans into a pot. Simmer over medium heat until chicken is heated. The longer you simmer, the better the flavors mix, 30-45 minutes. Also works great in a crockpot on low for 2-4 hours. Serve over tortilla chips.
