Serving Size / Yield
- 1 lb. ground beef
- 1 package large corn or flour tortillas
- 1 onion
- 2 10 oz. cans red enchilada sauce
- 1 1/2 C. shredded mexican cheese
Preheat oven to 375 degrees F. Brown ground beef in large skillet. Drain excess grease and set aside. Dice onion and cook in pan for 2 minutes. Add onion, 1 can of enchilada sauce, and 3/4 cup Mexican cheese to meat. Mix together and heat for 2 minutes. Fill tortillas with meat mixture and roll. Place enchiladas into baking dish. Cover with the remaining can of sauce and cheese. Cook for 20 minutes or until cheese is melted.
