5 Ingredient Roasted Pork

- 3-4 lbs boneless pork roast
- 1 tbsp extra-virgin olive oil
- 2 tsp ground black peppercorns
- 2 tsp dried rosemary
- 2 tsp dried thyme
Preheat oven to 350 degrees. Lightly coat the roast with olive oil. Combine all herbs and rub mixture into meat. Place the roast in a shallow pan and cook for 1 1/2 hours or until internal temperature reaches 155 degrees. Let stand for 10 minutes before slicing to serve.
