  • butter
  • 6 lg. eggs
  • 2/3 C. sugar
  • 1 1/2 tsp. vanilla extract
  • 1 C. sifted flour

Preheat oven to 375 degrees. Butter two 9-inch layer cake pans. Line bottom of the pan with wax paper. Butter the paper. Dust pans with flour and tap out any excess. In a large bowl with an electric mixer, beat the eggs on low speed. Slowly add sugar, and begin to increase mixer speed to high. Add vanilla. Beat egg until thick, about 7 minutes.

Place the flour in a strainer. Shake about 1/2 of the flour over egg mixture. Gradually fold in the flour with a spatula. Repeat, adding the flour in 2 groups and folding in until there are no streaks. Spread batter evenly in the pans. Bake 20-25 minutes. Cook the cakes for 10 minutes in the pans. Invert the cakes onto racks and remove pans. Carefully peel off the paper. Let cool. Serve.
