This recipe lives up to its name. All you need is five minutes to make a delicious cream of avocado soup for the whole family. Garnish with some cinnamon and croutons for an even tastier flavor combination.

  • 3 avocados, cut into chunks
  • 3 C vegetable broth
  • 3 Tbs. fresh lemon juice
  • 1/3 C fresh cilantro leaves
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 3 boiled eggs, halved
  • 3 Tbs. Scallions, minced
  • 1 tsp. cinnamon, for garnish
  • Croutons, for topping

Combine ingredients up to boiled eggs in a blender and process until smooth.

Place the eggs in a pot and cover with cold water. Bring to boil over medium-high heat, cover and then remove from the heat. Let eggs cool before peeling.

Once eggs are cool, peel and cut in half. Pour soup into a bowl and place egg on top, yolk side up. Garnish with cinnamon, scallions and crouton. Cover and refrigerate until completely chilled.
