  • ½ Cup of Blueberries
  • ¾ Cup of Chopped Tomatoes
  • ½ Cup of Diced Red Onion
  • ½ Cup of Chopped Jalepeño Pepper
  • 1 Cup of Corn
  • 1 Tablespoon of Chopped Cilantro
  • 1 Tablespoon of Chopped Parsley
  • 1 Tablespoon of Lime Juice
  • 1 Tablespoon of Olive Oil
  • 1 Pinch of Salt (or more to taste)
  • 1 Pinch of Pepper (or more to taste)

Gently mix together all of these ingredients in a large bowl and cover it with plastic wrap. Place it in your fridge for at least 2 hours before serving, or overnight to allow the flavors to blend together.
