  • 2 heads Romaine lettuce, chopped
  • 2 cups baby arugula
  • 1/2 C. red radishes, sliced very thinly
  • 1 C. toasted walnuts, halved
  • 1 C. blue cheese, crumbled
  • 1 pear, sliced very thinly
  • 5 Tbs. honey
  • 3 Tbs. Dijon mustard
  • 2 Tbs. white wine vinegar

To prepare the dressing, put the Dijon mustard, honey, and white wine vinegar into a food processor or blender and process until smooth. Set aside. 

Layer a serving dish with Romaine. Top with arugula, then a layer of radishes. Add walnuts, cheese, pear, and drizzle the honey-Dijon dressing over the top just prior to serving.
