A Delightful Mango Vanilla Cookie Parfait

- 2 cups of vanilla yogurt
- 1/2 cup of cubed mango
- 2 cups of diced mango
- 6 sugar-free shortbread cookies, crumbled
In a blender, take the dice mango and blend until smooth. then transfer it to a bowl. Then assemble the parfait. The layers should be 1-inch-thick. Lay one layer of the smooth textured mango at the bottom of a cup. Next add a spoonful of vanilla yogurt. Then place the cookie crumbles on top. Repeat layering until the top. Garnish with the cubed mangoes. Chill for 30 minutes.
