  • 3 lb. beef roast, trimmed and cut into 1" pieces
  • 1 tsp. salt
  • 1 tsp. pepper
  • 3 tsp. vegetable oil
  • 1 (32-oz.) carton beef stock
  • 1 (6-oz.) can tomato paste
  • 1 red onion, sliced
  • 2 garlic cloves, chopped
  • 4 carrots, cut into 1/2" pieces
  • 1.5 lb. potatoes, sliced

Season beef with salt and pepper. In large skillet, heat 1 tsp. vegetable oil over medium high heat. Cook beef in three batches, stirring occasionally, for 4 to 5 minutes each. Add 1 tsp. oil for each batch.

Place cooked beef in 6 qt. slow cooker. Pour about 1/2 C. stock into skillet and stir to loosen particles from bottom of skillet with a wooden spoon. Pour into slow cooker. In a medium bowl, stir together remaining stock and tomato paste.
Pour stock mixture into slow cooker. Add onion, garlic, carrots and potatoes. Cover and cook on high for about 5 to 6 hours or until meat is tender.
