African Beef and Peppers

Chilies, ginger, and many more tastes add to an exciting beef and bell pepper dish.

Ingredients

  • 6 roasted Anaheim chilies, skinned, seeded and chopped
  • 2 tsp. fresh ginger, chopped fine
  • 4 cloves garlic, minced
  • 1/4 tsp. ground cardamom
  • 1/4 tsp. ground turmeric
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/2 C. red wine
  • 2 lb. sirloin steak, cut into 1/2-inch strips
  • 1/4 C. olive oil
  • 2 C. chopped onion
  • 2 medium bell peppers, seeded and cut into strips

Directions

Purée Anaheim chilies, ginger, garlic, remaining spices and wine to a smooth paste, set aside. Heat oil in a skillet. Brown beef in hot oil. When evenly browned, remove and drain off all but 2 Tbs. oil. Sauté onion in the oil until soft but not browned. Add the bell peppers and sauté for an additional 3 minutes. Add the chile purée and bring to a boil, stirring constantly. Add the beef and mix until strips are coated with sauce. Reduce heat and simmer 5 minutes more until the beef is done.

Yield: 6 servings
