On the off-chance you might have alligator meat lying around... here's a great way to use it!

Ingredients

  • 1 lb. alligator meat, ground
  • 1 Egg
  • 1 tbs. Onion, chop fine
  • 2 tbs. Celery, chop fine
  • 1 tbs. Parsley, chop fine
  • 2 tbs. Shallots, chop fine
  • 2 tsp. Lemon pepper
  • 1/2 tsp. Salt
  • 1/4 C. Bread crumbs
  • Flour to dredge
  • 1 C. Cooking oil

Directions

Mix all ingredients, form into 1" balls. Allow to set for 1 hour. Dredge with flour and fry until brown. Serve hot.
