  • 1 1/4 C. powdered sugar
  • 1 1/3 C. almond flour
  • 3 large egg whites
  • 1/4 tsp. salt
  • 1/4 C. white sugar
  • 1/2 tsp. vanilla extract
  • 2 C. buttercream frosting

Preheat the oven to 300 degrees and combine the powdered sugar and almond flour. Whisk the egg whites in a bowl on medium until foamy and beat in the salt. Whisk in the white sugar slowly until soft peaks form. Fold the almond mixture into the egg whites until incorporated and transfer to a pastry bag. Pipe the mixture into circles on the wax paper baking sheets and bake for 20 minutes until firm. Let the cookies cool completely before creating buttercream sandwiches with the halves. Refrigerate 20 minutes before serving.
