Use ground almonds and flour as a base to these tasty snowball cookies! Once the cookies are refrigerated and baked you can sprinkle on powdered sugar if you choose.

  • 1 C. sliced almonds
  • 3/4 C. white sugar
  • 3/4 C. unsalted butter, softened
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1 3/4 C. flour
  • 1/2 tsp. salt
  • 1 C. powdered sugar

Preheat the oven to 325 degrees. Pulse the almonds and sugar until finely ground. Put in the butter and process until it is smooth, about a minute. Add the vanilla and almond extracts and pulse again to combine. Slowly put in the flour and salt and mix until well combined. Roll the dough into a log on wax paper and refrigerate for 30 minutes. Cut the chilled dough into pieces and roll into balls. Place them on the baking sheets and bake for 15 minutes. Sprinkle the powdered sugar on the cookies until evenly coated and serve when cooled.
