Aloha Pork N Rice
Ingredients
- 3/4 lb. boneless lean pork
- 1 red bell pepper cut into1 in. small strips
- 1/4 C. crunchy-style peanut butter
- 1 Tbs. honey
- 1 Tbs. finely chopped candied ginger
- 1 small jalapeno chili seeded and minced
- 2 Tbs. teriyaki sauce
- 1/2 C. basmati rice
- 2 Tbs. Toasted coconut
Directions
Cut pork into 1 x 1/4 inch strips. Place pork and bell pepper in a 3 1/2 qt. slow cooker. In a small bowl, combine peanut butter, honey, ginger and jalapeno chili. Stir in teriyaki sauce. Spoon over pork. Cover and cook on low 4-5 hours or until pork is tender. Stir thoroughly before serving. Meanwhile, cook rice according to package directions. Spoon pork mixture over rice. Sprinkle with toasted coconut. Makes 4 servings. Preheat oven to 350 degrees. Spread coconut in a 9 inch pie or cake pan. Toast about 5 minutes or until golden.
