Aloha Wild Rice

Add some diced chicken and crushed pineapple to get a taste of paradise.

Ingredients

  • 1 C. wild rice, uncooked
  • 3 C. water
  • 1 tsp. salt
  • 1/2 C. cooked chicken, diced
  • 1/2 C. celery, diced
  • 1/2 C. green onion, sliced
  • 1 small can crushed pineapple, drained
  • 1/2 C. mayonnaise
  • 2 to 3 kiwi fruit, sliced
  • Salt to taste

Directions

Mix wild rice, water, and salt in 2 quart oven-proof dish. Bake uncovered 350 degree oven for 45 minutes or until fluffy. Cool well. In large bowl, mix rice, chicken, celery, green onions, pineapple, and blend in mayonnaise. Top with kiwi.
