The Southern Italians are all about the mediterranean food. With the warm weather and crystal sea, their vibrant diet contains a plentiful amount of fish. The squid dish, calamari, is especially prevalent in the Amalfi region. However, you don’t need to buy a plane ticket to taste this delectable fish. You can bring a little bit of Italy into your home with this Calamari styled pasta.

  • 1 pound freshly cooked calamari
  • 1 pound spaghetti
  • 2 tomatoes (chopped)
  • 2 C. tomato sauce
  • 1/2 C. capers
  • 1/2 tsp paprika
  • salt and pepper for seasoning
  • 3 tbsp lemon juice
  • Fresh parsley for garnish
  • Parmesan cheese (personal preference)

Preheat the oven to 360 F. Place calamari on baking sheet and sprinkle salt, pepper and paprika on top for seasoning. Heat calamari for 10-15 mins until golden brown.
Cook pasta in large pot of boiling salted water. Stir occasionally, until pasta is tender yet firm to bite. Drain pasta and return to pot. Add lemon juice, tomato sauce, chopped tomatoes and capers. Stir until pasta is coated in the mixture. Finally, add the calamari to the pasta.

Garnish with fresh parsley and a shaving of parmesan cheese.
