This salad is made with all sorts of veggies. This little salad is quick to make and healthy to eat. It is made with black eyed peas, peppers and green onions.

  • 1 large tomato, diced
  • 1/2 medium red onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 2 tablespoons of chopped green onions
  • 2 tablespoons of chopped fresh parsley leaves
  • 1/4 cup of rice wine vinegar
  • 1/4 cup of canola oil
  • 1/2 a teaspoon of sugar
  • Salt and pepper, to taste
  • Two 15-ounce cans black-eyed peas, drained

First, in a medium bowl, combine the first 6 ingredients.
Then, in a small bowl, whisk together the vinegar, oil, sugar, salt and pepper.
Finally, toss everything together in one big bowl and let the salad marinate for up to 8 hours in the refrigerator before serving.
