  • 2 C. rice
  • 1 (4 oz.) chicken breast
  • 1 large egg
  • 1 clove of garlic, minced
  • 2 green onions, sliced
  • ¼ C. mushrooms
  • ½ C. carrots, chopped
  • ⅓ C. frozen peas
  • 3 Tbs. sesame oil
  • 2 Tbs. soy sauce
  • Salt and pepper to taste

Cook the rice according to the packages directions and set aside. On medium-high heat, pan fry the chicken in 1 ½ Tbs. of the sesame oil. Once the chicken is thoroughly cooked and cooled, dice it into cubes. Use the rest of the oil and saute the mushroom, carrots, peas and garlic until they’re tender. Add the chicken, rice, and soy sauce; cook this on medium-low heat for about 10 minutes. Next, add in the egg and onion. Stir this until the egg is cooked. Add the salt and pepper to taste and enjoy!
