  • Cookie Crumb Crust:
  • 3 T. sugar
  • 1 ½ C. Oreo crumbs
  • ⅓ C. butter, melted
  • Chocolate Mousse Cheesecake Batter:
  • 2 tsp. vanilla extract
  • 1 C. whipping cream
  • 2 T. powdered sugar
  • 1 ½ lbs. cream cheese
  • 3 unsweetened baking chocolate squares, melted
  • Ganache Glaze:
  • ¾ C. semi sweet or dark chocolate chips
  • ¼ C. whipping cream

For the crust line the pan with parchment paper. Mix the Oreo crumbs, melted butter and sugar. Spread an even layer of the crust on the parchment paper lined pan. For the chocolate mousse cheesecake batter, mix the whipping cream, cream cheese, melted chocolate, and sugar. Add the eggs, one at time. Mix in the 2 tsp. of vanilla extract. Pour this into a spring form pan. Let it bake in a water bath at 300 degrees for an hour. Remove it from the oven and let it cool. For the ganache glaze boil the whipping cream. Melt the chocolate chips on a low heat. When done pour it over the cake.
