  • 2 Tbs. vegetable oil
  • 4 medium potatoes, peeled and chopped
  • 1/2 C. onion, chopped
  • 3/4 C. canned peas and carrots, drained
  • 1 C. red curry sauce
  • 12 large wonton wrappers

In a crockpot, add the potato cubes and onion. Cook on high for 1-2 hours, or until potatoes are soft. Stir occasionally. At the end, turn the heat to low and add peas and carrots and curry sauce. Cook for 20 minutes, or until heated all the way through and mixed throughly. Turn off heat and let cool.

Lightly flour a baking sheet. Cut each wanton wrapper in half diagonally and spoon 1-2 tablespoons of filling into the middle of each triangle. Brush the edges of the wrappers with water, fold into a triangle, and seal the edges.

In a deep-fryer or deep, heavy pot, heat the oil to 350 degrees. Fry a few samosas at a time, 2-3 minutes on each side, or until golden brown. Drain on paper towel and serve with chutney.
